Just in time for Christmas! Pru has delivers a healthy Christmas treat for you to cook with the kids. It is possible to enjoy treats with that chocolate flavour that is healthy and provides more nutrition for your family.
HEALTHY CHOCOLATE SPIDERS
1 cup natural peanut butter
Pinch of Himalayan Crystal Salt (if using salt free peanut butter)
70gm cacao butter
2 tablespoons coconut sugar
2 tablespoons maple syrup/raw honey/coconut nectar/rice malt syrup
2 tablespoons raw cacao
1 ½ cups shredded coconut
- Place the peanut butter, cacao butter, coconut sugar, maple syrup and salt in a small saucepan and gently bring together over a low heat. Stirring occasionally to stop the peanut butter sticking to the bottom of the saucepan. Do not bring to the boil though.
- Once cacao butter is just melted, remove from stovetop and add cacao powder and mix well
- Add shredded coconut and mix well ensuring all coconut is thoroughly coated.
- On a lined tray (baking paper or silicone is best) place large tablespoons of the mixture until it is all used and place into freezer to set. For approximately 20 mins.
Pru’s philosophy when it comes to food is this “Everything isn’t as bad as it seems. Yes, I am a huge advocate for clean, healthy, wholesome food (especially if it has something green) but sometimes a ‘cheat’ here and there is well worth it. Life is too short.”
Having been diagnosed with Chronic Fatigue Syndrome over 20 years ago Pru started playing around with food due to her body not coping too well with the choices she had been making. She discovered that she loved food. “I love eating it. I love putting my energy and creativity into it. What I also discovered is that food really is medicine.”
